Why exit criteria?
A stage is a promise about what has happened. If two reps can put the same deal in different stages, the stages are wrong.
How do I set probabilities?
Start with the defaults; replace them with your own won/lost history per stage after one quarter.
Is my data stored?
No. Every tool runs entirely in your browser; nothing is sent to a server.
